Dietary & allergen notes
Listed allergens: Milk (cheese) · Wheat (usual low-carb tortillas)
- Check the tortilla label for soy and other allergens. Low-carb does not mean gluten-free. Check tomato sauce, seasonings and cooking spray.
With ingredient changes or label checks
- Gluten-free needs suitable gluten-free tortillas and verified sauces and seasonings. Dairy-free needs a suitable cheese alternative; check its ingredients.

LET’S MAKE IT
The method
- 01
Heat a little of the oil in a wide pan over medium-high heat. Add the diced onion and cook, stirring, until soft and browned, about 6–8 minutes.
- 02
Add the ground beef, garlic powder, onion powder, smoked paprika, oregano, cumin, cayenne, pepper and salt. Break up the beef and cook until fully cooked through, about 7–10 minutes. Stir in the tomato sauce and simmer for 2–3 minutes until the filling is moist but not runny.
- 03
For the avocado sauce, blend the avocado, garlic, coriander, water, lemon juice, salt and pepper until smooth. Add a little more water if needed to make it pourable.
- 04
Warm the tortillas briefly if needed so they roll without cracking. On each tortilla, add layer 1: 20 g low-fat cheese; layer 2: one-tenth of the beef mixture for the base batch of 10 taquitos; layer 3: another 20 g low-fat cheese. Roll tightly. When scaling, divide the beef mixture equally among the tortillas and keep 20 g low-fat cheese in each cheese layer (40 g per taquito).
- 05
Heat a little of the remaining oil in a pan over medium heat. Place the taquitos seam-side down and toast in batches, turning carefully, until crispy on all sides and the cheese is melted, about 6–8 minutes per batch. Add a light coating of oil as needed.
- 06
Serve the crisp taquitos with the blended avocado sauce.

What’s included in this estimate?
Estimated for 600 g 95% lean beef, 10 medium low-carb tortillas, 400 g low-fat cheese (40 g per taquito; macros vary by brand), 199 mL tomato sauce, 1 tsp oil and all avocado sauce. One serving is one taquito plus one-tenth of the sauce. Tortilla brands and fibre content vary greatly; the 4/4/9 calorie estimate may exceed package calories. These estimates are not the PDF’s claimed 300 calories and 35 g protein.
Approximate ingredient-based estimates, not verified nutrition labels. Brands, ingredient sizes and oil absorption change the results. Carbs include fibre; calories are approximated from protein, carbs and fat using the general 4/4/9 method.
