Dietary & allergen notes
Listed allergens: Soy (tofu; often miso)
- Dashi or bonito-flavored miso can contain fish. Miso may contain barley or wheat; broth ingredients vary.
With ingredient changes or label checks
- For vegetarian or vegan, use vegetable broth and fish-free miso. For gluten-free, choose explicitly gluten-free miso and broth. Chickpea miso does not remove the soy in tofu.

½ cup chivesUse the same chopped volume as a finishing garnish. Add at the end rather than frying them like onion whites.

LET’S MAKE IT
The method
- 01
Place vegetable broth in a medium sauce pan and bring to a low simmer.
- 02
In the meantime, place miso (starting with lesser end of range) into a small bowl, add a little hot water and whisk until smooth.
- 03
This will ensure it doesn’t clump when added to the soup later.
- 04
Set aside.
- 05
To the broth add chard (or other greens of choice), green onion, and tofu (if using silken, add at the end of cooking) and cook for 5 minutes.
- 06
Then add nori and stir.
- 07
Remove from heat, add miso mixture, and stir to combine.
- 08
Taste and add more miso or a pinch of sea salt if desired.
- 09
Serve warm.
- 10
Best when fresh.
